Little Souls There is no greater pleasure then watching our wandering little souls explore the world and find their own place of happiness. Take a look

4 week old baby boy | Stavanger Fotograf

It is ideal to photograph in the first two weeks, however I took on the challenge with this little boy and he was a little darling.

Perfect Vanilla Rainbow Cupcakes | By Evy Photography | Stavanger Fotograf

20150207-IMG_9581
I have a little girl who loves My little Pony and Rainbow Dash is a favourite at the moment. Although her birthday is in June she has started to plan her 6th birthday and she wants a My Little Pony birthday with a Rainbow cake. After looking at the internet we decided to try make some gluten free vanilla rainbow cupcakes. It was fun mixing all the colours.

I do enjoy baking with my girls and since we had the pleasure of a weekend with no major plans I took the opportunity to bake. We decided to try and make Rainbow Cupcakes.

A couple of years ago looking for the perfect Vanilla Cupcake Recipe I came across Glorious Treats and her Perfect Vanilla Cupcake Recipe. I converted the recipe to Metric and swapped it for Gluten Free Flour.

Perfect Vanilla Cupcakes (Gluten free)

170gr Gluten Free Multipurpose Flour
1 1/4 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
1 1/2 Teaspoon Vanilla Sugar
1/2 Teaspoon Salt
2 Eggs
150 gr Sugar
112 gr Oil
120 gr Buttermilk

  1. Mix together all the dry ingredients in a bowl
  2. In your mixer i.e. Kitchen Aid beat the eggs for approx 10 seconds
  3. Add the sugar and continue beating on full speed for approx 1 minute.
  4. Add the oil and beat until mixed
  5. Add half of the dry mixture and beat until mix
  6. Add half the buttermilk beat until mix, repeat for dry ingredients following with rest of the buttermilk
We usually double up to make 24-30 cupcakes.

Cook for approx 14 minutes at 180 degrees fahrenheit.

Rainbow Cupcakes:
To make the rainbow cupcakes with divided the mixture evenly into 6 and added the food colour.
We added one tiny spoon of each colour (red, orange, yellow, green, blue, purple).
I am not a scientist but for some reason the colours don’t blend and the end result gives a lovely rainbow effect.

The buttercream I don’t have a recipe for but I mix butter, icing sugar, philadelphia, whipping cream and flavour with some vanilla extract.
We hope you liked the end result of our attempt to make The perfect Gluten free Vanilla Rainbow Cupcakes.

5-52 Small | By Evy Photography | Stavanger Fotograf

Small is a descriptive and measure word that often refer to something insignificant and less than normal. Often a small gesture becomes the significant in our life, and the small turns into something big.
My soon to be 10 year old is going through the pre-teen years where the children are trying to figure out who they are. Their teacher is doing a project where they have pupil of the day. They child who is the pupil of the day will receive a note from her fellow peers with one or more word saying something nice which they will then take home at the end of the day. This week my daughter came home with an envelope filled with small notes from her fellow classmates. These are the small gestures, that has a huge impact, reading the kind words written about you can only lift your spirit, your self esteem and your self worth. However small these notes or words are, these will be stored in a memory box because whenever she needs a reminder of what a beautiful person she is I will ask her to read them. She will be left with words like “kind, sweet, clever, good friend, good gymnast, fun to be with.”
As a mum it made me so proud reading the kind words written about her and how lucky am I to be able to call her my daughter.

4-52 A part of me | By Evy Photography | Stavanger photograph

20150129-IMG_9472-2

I always viewed myself as a confident and open individual. However in my adult year I have come to realise that I am in fact a very sensitive and private person. I have realised that there is a part of me that I keep very close to my heart and only a selected few get access into my heart, to learn how I really feel and think. My emotions and feelings are something that is very private to me.

As I do keep everything so close to my heart, I found this weeks topic “a part of me” challenging. Instead of taking photos of my children who are a huge part of me, I decided to think out of this box and captured this image to represent how how my emotions are kept close to my heart.

3-52 Light | By Evy Photography | Stavanger Fotograf

LIGHT
During the summer I used to sit at the computer and work away, the clock would tick past midnight and I would still see a sky with the colours of the rainbow. The sunset sky is just stunning displaying its beauty in blue, pink, yellow, purple. It is easy to forget time when the day never seem to end. However the flip side of the long and bright summer days is the dark and dull winter days. During the winter we keep chasing the daylight. At the moment the sun will rise between 9-10am and the sun will go down at around 4-5pm. On a dull day of rain, the day will feel like an early evening and the daylight will be very limited.
When you work from 8-4, catching the daylight becomes a challenge. It is near impossible to get a photo outside before it is too dark. My big girl was not feeling well one day so I was working from home and that meant that I got to pick up the little one from nursery across the road at 4pm and take her to the local field nearby to catch the last of the daylight as the sun was going down.
My little girl is a creative little soul who would spin around to show me how beautiful her dress is to the next minute dress as a little supergirl where she wants to save the world. Then she gets to the stage where she just wants to snuggle up. I picked the weekly picture of her all snuggled up in a patch work blanket that I had spotted at Mormor and Mio in Stavanger. It is a retro store in the colourful street where we often go when we are in town. My daughters loves a little cafe called Sjokoladepikene where they serve the best hot chocolate and gluten free cakes. On one of our trips to town this summer I spotted the patchwork blanket that I adored for sale, but I just could not pick between the 3 available so I left. However on our last trip to town I made the decision to go for it, buy one before I change my mind and I am so glad I did because without it I would not have managed to capture this adorable picture of my daughter as we  were chasing daylight. Some days I really struggle to get one good photo of my little one, because she is full of imagination, she is stubborn and like to do her own thing. However on this specific Tuesday afternoon she was AMAZING and I just got so many pictures that I will treasure. She is wearing one of her favourite dresses which she calls her Superhero dress and is by a British label

Beau Loves. This oversized dress was very popular and sold out in a matter of hours so we were lucky to get one. She is my little hero, and her powers is to break open hearts and fill them with love, her love for life is contagious. It was really cold outside so we were only out for 15-20 minutes and I just have to share a selection of images captured. I hope you can see why I had a hard time choosing which image to use this week.
