I decided to have a go at the cake pops. My daughter have Coeliac so I just made sure to make a gluten free cake and choose gluten free ingredients.
My kids do love when I bake – I guess these two images is proof enough.
Gluten free madeira cake or basic sponge cake with vanilla flavouring
Lovely cake crumbled up into small pieces.
Cheating by using shop purchased frosting, if you want you can cheat even more and buy a ready made cake from the shop.
Adding enough frosting to create a mix that can be rolled into balls without sticking to your hands or being too dry and fall apart.
Little balls rolled, I had read that it would be good to put them in the fridge for an hour to make it easier to put stick in and also dip in coating. My girls did not have enough patience to wait a whole hour so we opted for the freezer for 10 minutes.
I had purchased some Candy Melt from Amazon but I didn’t like the consistency when melting. Thought it was too thick so didn’t get a nice smooth finish. The Candy Melt was also very sweet so didn’t want such a thick coating.
If anyone have worked with Candy Melt and have a suggestion for how to improve that process please let me know.
The kids however loved it – excuse the poor photo and the bad hair day.
So as I do love chocolate I could not resist melting some chocolate and adding some coconut fat to create the correct consistency for a smooth cover.
The end result and they were more to my liking.
The kids however loved both equally as much.
