I have a little girl who loves My little Pony and Rainbow Dash is a favourite at the moment. Although her birthday is in June she has started to plan her 6th birthday and she wants a My Little Pony birthday with a Rainbow cake. After looking at the internet we decided to try make some gluten free vanilla rainbow cupcakes. It was fun mixing all the colours.
I do enjoy baking with my girls and since we had the pleasure of a weekend with no major plans I took the opportunity to bake. We decided to try and make Rainbow Cupcakes.
A couple of years ago looking for the perfect Vanilla Cupcake Recipe I came across Glorious Treats and her Perfect Vanilla Cupcake Recipe. I converted the recipe to Metric and swapped it for Gluten Free Flour.
Perfect Vanilla Cupcakes (Gluten free)
170gr Gluten Free Multipurpose Flour
1 1/4 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
1 1/2 Teaspoon Vanilla Sugar
1/2 Teaspoon Salt
2 Eggs
150 gr Sugar
112 gr Oil
120 gr Buttermilk
- Mix together all the dry ingredients in a bowl
- In your mixer i.e. Kitchen Aid beat the eggs for approx 10 seconds
- Add the sugar and continue beating on full speed for approx 1 minute.
- Add the oil and beat until mixed
- Add half of the dry mixture and beat until mix
- Add half the buttermilk beat until mix, repeat for dry ingredients following with rest of the buttermilk
We usually double up to make 24-30 cupcakes.
Cook for approx 14 minutes at 180 degrees fahrenheit.
Rainbow Cupcakes:
To make the rainbow cupcakes with divided the mixture evenly into 6 and added the food colour.
We added one tiny spoon of each colour (red, orange, yellow, green, blue, purple).
I am not a scientist but for some reason the colours don’t blend and the end result gives a lovely rainbow effect.
The buttercream I don’t have a recipe for but I mix butter, icing sugar, philadelphia, whipping cream and flavour with some vanilla extract.
